Mini Recipe: Parsley Tilapia and Serrano Avocado Dip

This is my first time posting a recipe, so be patient. Haha.
I know people biggest complaint with recipes is usually the mountain of blurb that accompanies it (usually as a header), so I’ve decided to spare you (for now..) from my romantics.
Here’s a quick recipe for a meal I made last night. Enjoy!
Parsley Tilapia with a Serrano Tomato Dipping Dish!
Ingredients!
I cook for my partner and I, so my portions are set for that. However… use however much you (and yours) need!
Tilapia (Ours is from H-E-B’s Fish Market!)
Parsley
Coconut Oil (Butter would work well too)
Seasoning Blend (I use salt+pepper, onion powder. Keeping it simple here)
SERRANO AVOCADO DIP
Avocado (I used one jumbo Avo.)
Roma Tomato (I used two!)
Garlic (I used cloves, but however you have Garlic, is fine!)
Serrano Pepper (I used just one small one!)
Olive Oil (Or whatever Oil you prefer!)
Okay, whatever side dishes you like- feel free to have! I know that can be super specific for folks :)
However, I made roasted Sweet Potato, roasted Asparagus, and cornbread! (Rice for me, as I have a gluten allergy)
Starting with the sauce!
I washed all the produce (including the avocado, haha), and diced it all up as small as I could muster.
While I did this, I turned the stove on medium and allowed the oil to heat up.
Then I just added in the diced tomatoes, shelled garlic, diced Serrano, and the seasoning. (Again, I just use Salt, Pepper, and Onion Powder. I would usually add fresh onion, but I forgot to grab some this time)
I poured in a little bit of water (I’d reckon a half cup), so that it wouldn’t stick and burn to the pan.
Then, I let it sit covered while I worked on the rest !

I mashed the avocado with salt and pepper until it was one consistent texture.
After about 30 minutes of simmering, I took the Serrano tomato sauce and mashed it evenly into the avocado.
If the sound of that texture is nightmarish for you, feel free to keep them separated!

Preheat the oven to 350°
I just washed one Sweet Potato, and chopped it halfway in the shape of a cross. (So that it could roast evenly!)
I placed it in my glass pan, and added in my washed and cut asparagus.
Using the microwave, I melted down about 1/3 cup of coconut oil. I then evenly drizzled it over the asparagus and sweet potato. I added a few cloves of garlic, and the usual seasoning (see above!)
I put it in the oven to let it cook!
After it was in for a bit (about 15-20 minutes) I raised the heat to 425°, until it was finished. Note: everyone’s oven cooks differently! Just check it as you go, once it’s good to mash with a fork, the sweet potato is good to go :) And the asparagus will cook quicker than the potato!
Once you can slice through the asparagus with a fork, I would take it out! But everyone prefers their asparagus different :)
Tilapia time!
You want to make sure your tilapia are de thawed, if they were frozen :)
Using the same pan from the sauce, I brought it up to medium heat and added a 1/2 tbsp of coconut oil.
Once it was hot, I added some Parsley and seasoning (same as above) , and then the Tilapia.
Tilapia cooks fast! It takes about 7 minutes. I make sure to flip it after a few minutes, and then again if needed.
You will know it’s ready when you stab a fork into it, twist, and it flakes up!
